Cheddar with Caramelized Apples

1 Tbls butter
2 Tbls packed brown sugar
2 medium Gala apples, peeled, cored and cut into ¾ inch slices
¼ c raisins or crasins
4 ozsharp cheddar, sliced
Whole Wheat crackers

In medium skillet over medium heat, melt butter til bubbly, then add brown sugar- stir til combined.
Add apples and raisins and reduce heat to low. Cover pan and cook, stirring occasionally, for about 6 minutes or until apples are beginning to soften.
Uncover pan and continue cooking, stirring often until apples are lightly browned and just tender. Let cool slightly.
Top each cracker with a slice of cheese and spoonful of warm apple
